Salmon With Bok Choy & Apples

Don’t like to cook? Working parent short on time? Having guests over but need to prepare quickly? Try these simple recipes, each under 15 minutes of prep time.
Ingredients
- 1 tspn olive oil
- 1 1/4 lbs skinless salmon, cut into 4
- Salt & pepper
- 1/2 head bok choy, thinly sliced
- 1 apple, sliced
- 4 scallions, sliced
- 1/3 cup plan low-fat yogurt
- 2 tbspn lemon juice
Preparation
- Heat olive oil in a large nonstick skillet over medium-high heat.
- Season salmon with ¼ tspn salt and pepper and cook 3 to 4 mins. each side.
- In bowl, toss bok choy, apple, and scallions with yogurt, lemon juice, salt, and pepper.
- Serve together.
Chicken Tortilla Soup

Ingredients
- 1 jar salsa verde
- 3 cups cooked chicken pieces (1 small rotisserie chicken or leftovers will work)
- 1 15-ounce can beans, drained
- 3 cups chicken broth or more if desired
- 1tspn ground cumin
- 2 green onions, chopped
- 1/2 cup sour cream
- Tortilla chips to top soup
Preparation
- Empty salsa in large saucepan. Cook for 2 minutes over medium-high heat.
- Add chicken, beans, broth, and cumin.
- Boil, lower heat to simmer, and cook 10 minutes. Stir.
- Top each bowl with onions, sour cream, tortilla chips.
Salmon & Tomatoes

Ingredients
- 1/3 cup olive oil
- 1 4 lb. chicken, cut
- 3 tspns Kosher salt
- 2 tspns pepper
- 2 pouches of ready-to-serve rice
- 1 lb. broccoli
- 2 pkgs mushrooms, stems removed
Preparation
- Place salmon and tomatoes in pan or rimmed baking sheat.
- Drizzle with olive oil and season with salt & pepper and paprika.
- Sprinkle thyme and garlic.
- Broil for 8-10 minutes.
Quick Quesadillas

Ingredients
- 1 can black beans, drained
- 1 can corn kernels, drained
- 3/4 cup salsa
- 1 pkg tortillas
- 1 1/2 cups shredded cheese
- 1 onion, thinly sliced
- 1/3 cup cilantro leaves
- Salt & pepper
- Lime juice
- 2 tbspn olive oil
- 1 head romaine lettuce, sliced 1 inch thick
Preparation
- Heat oven to 400° F. Place tortillas on baking sheet.
- In a medium bowl, combine beans, corn, and salsa.
- Sprinkle half the tortillas with half the cheese. Then top bean mixture.
- Sprinkle with the remaining cheese; top with the last half of tortillas.
- Bake until cheese has melted, 5 to 7 minutes.
- Combine the lettuce, onion, cilantro, salt, pepper, lime juice, and oil. Toss.
- Cut quesadilla into slices.
Chicken & BBQ Chicken Pizza

Ingredients
- 3/4 cup chopped red onion
- Cooking spray
- 1 1/2 cups shredded rotisserie chicken breast
- 1/2 cup unsalted chicken stock
- 1/4 cup marinara sauce
- 1/4 cup BBQ sauce
- 3 thin pizza crusts
- 2 ounces fresh cheese, sliced
- 1/3 cup chopped green onions
- 1/2 tspn black pepper
Preparation
- Preheat oven to 450 degrees F.
- Heat saucepan over medium heat. Coat with cooking spray.
- Add onion for 2 minutes.
- Stir in stock, chicken, marinara, BBQ sauce.
- Cook until heated.
- Remove pan from heated stovetop.
- Spread 1/2 cup chicken mixture over each crush evenly.
- Spread cheese evenly.
- Place pizzas in oven for 9 minutes or until cheese melets
- Top with onions and pepper.
Couscous with Shrimp Salad

Ingredients
- 2 cup couscous
- Salt & pepper
- 1 1/2 pounds shrimp, peeled and cooked
- Cherry tomatoes, halved
- 3/4 cup fresh basil leaves, torn
- 2 scallions, sliced
- 2tbspn olive oil
- 2tspn grated lemon zest, plus 3 tbspns lemon juice
- Option to add corn and peas.
Preparation
- Place couscous bowl. Add 1 cup hot water and salt and pepper. Cover and let sit for 5 minutes; stir.
- In a separate medium bowl, combine shrimp, tomatoes, basil, scallions, oil, lemon zest and juice, salt and pepper. Toss.
- Serve over couscous.
