Ingredients

  • 1 tspn olive oil
  • 1 1/4 lbs skinless salmon, cut into 4
  • Salt & pepper
  • 1/2 head bok choy, thinly sliced
  • 1 apple, sliced
  • 4 scallions, sliced
  • 1/3 cup plan low-fat yogurt
  • 2 tbspn lemon juice

Preparation

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Season salmon with ¼ tspn salt and pepper and cook 3 to 4 mins. each side.
  3. In bowl, toss bok choy, apple, and scallions with yogurt, lemon juice, salt, and pepper.
  4. Serve together.

Ingredients

  • 1 jar salsa verde
  • 3 cups cooked chicken pieces (1 small rotisserie chicken or leftovers will work)
  • 1 15-ounce can beans, drained
  • 3 cups chicken broth or more if desired
  • 1tspn ground cumin
  • 2 green onions, chopped
  • 1/2 cup sour cream
  • Tortilla chips to top soup

Preparation

  1. Empty salsa in large saucepan. Cook for 2 minutes over medium-high heat.
  2. Add chicken, beans, broth, and cumin.
  3. Boil, lower heat to simmer, and cook 10 minutes. Stir.
  4. Top each bowl with onions, sour cream, tortilla chips.

  • 1/3 cup olive oil
  • 1 4 lb. chicken, cut
  • 3 tspns Kosher salt
  • 2 tspns pepper
  • 2 pouches of ready-to-serve rice
  • 1 lb. broccoli
  • 2 pkgs mushrooms, stems removed

Preparation

  1. Place salmon and tomatoes in pan or rimmed baking sheat.
  2. Drizzle with olive oil and season with salt & pepper and paprika.
  3. Sprinkle thyme and garlic.
  4. Broil for 8-10 minutes.

Ingredients

  • 1 can black beans, drained
  • 1 can corn kernels, drained
  • 3/4 cup salsa
  • 1 pkg tortillas
  • 1 1/2 cups shredded cheese
  • 1 onion, thinly sliced
  • 1/3 cup cilantro leaves
  • Salt & pepper
  • Lime juice
  • 2 tbspn olive oil
  • 1 head romaine lettuce, sliced 1 inch thick

Preparation

  1. Heat oven to 400° F. Place tortillas on baking sheet.
  2. In a medium bowl, combine beans, corn, and salsa.
  3. Sprinkle half the tortillas with half the cheese. Then top bean mixture.
  4. Sprinkle with the remaining cheese; top with the last half of tortillas.
  5. Bake until cheese has melted, 5 to 7 minutes.
  6. Combine the lettuce, onion, cilantro, salt, pepper, lime juice, and oil. Toss.
  7. Cut quesadilla into slices.

Ingredients

  • 3/4 cup chopped red onion
  • Cooking spray
  • 1 1/2 cups shredded rotisserie chicken breast
  • 1/2 cup unsalted chicken stock
  • 1/4 cup marinara sauce
  • 1/4 cup BBQ sauce
  • 3 thin pizza crusts
  • 2 ounces fresh cheese, sliced
  • 1/3 cup chopped green onions
  • 1/2 tspn black pepper

Preparation

  1. Preheat oven to 450 degrees F.
  2. Heat saucepan over medium heat. Coat with cooking spray.
  3. Add onion for 2 minutes.
  4. Stir in stock, chicken, marinara, BBQ sauce.
  5. Cook until heated.
  6. Remove pan from heated stovetop.
  7. Spread 1/2 cup chicken mixture over each crush evenly.
  8. Spread cheese evenly.
  9. Place pizzas in oven for 9 minutes or until cheese melets
  10. Top with onions and pepper.

  • 2 cup couscous
  • Salt & pepper
  • 1 1/2 pounds shrimp, peeled and cooked
  • Cherry tomatoes, halved
  • 3/4 cup fresh basil leaves, torn
  • 2 scallions, sliced
  • 2tbspn olive oil
  • 2tspn grated lemon zest, plus 3 tbspns lemon juice
  • Option to add corn and peas.

Preparation

  1. Place couscous bowl. Add 1 cup hot water and salt and pepper. Cover and let sit for 5 minutes; stir.
  2. In a separate medium bowl, combine shrimp, tomatoes, basil, scallions, oil, lemon zest and juice, salt and pepper. Toss.
  3. Serve over couscous.
