Delicious Pancake Syrup

Ingredients
- ½ teaspoon baking soda
- ¼ teaspoon ground cinnamon
- 1 tablespoon corn syrup
- 1 tablespoon vanilla extract
- 1 cup buttermilk
- 1 cup sugar
- ½ cup butter
Preparation
- Bring together cinnamon, corn syrup, vanilla extract, buttermilk, sugar, and butter into a simmer in a saucepan using medium to high heat.
- Once the mixture is simmering, you can whisk in the baking soda and cook this mixture for 10 minutes.
- After this, remove the mixture from the heat and serve warm.
Orange Pecan French Toast

Ingredients
- 1 tablespoon of confectioner’s sugar for the purpose of dusting
- 2 eggs
- 3 egg whites
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 3 tablespoons of white sugar
- ½ cup of 2% milk
- 1 cup of fresh orange juice
- 1 teaspoon of grated orange zest
- 12 slices of French bread
- 1/3 cup of chopped pecans
- 2 tablespoons of light corn syrup
- 1/3 cup of melted butter
- 1 cup of packed brown sugar
Preparation
- Take a small bowl in which you stir corn syrup, melted butter, and brown sugar together.
- Pour this mixture into a 9x13 inch greased baking dish and spread it evenly. Sprinkle the pecans on top of this.
- Arrange the slices of bread in the dish’s bottom in a single layer.
- Take a medium sized bowl and whisk eggs, egg whites, vanilla, cinnamon, sugar, milk, orange juice, and orange zest together.
- Pour the mixture on top of the bread and press it on the slices so that it can absorb it.
- Cover and keep it in the refrigerator for about an hour or even overnight.
- Preheat oven to 175 degrees C. Remove cover from baking dish and allow it to stand at room temperature for about 20 minutes.
- Bake for about 35 minutes until it is golden brown. Dust this with confectioners’ sugar before you serve.
Sausage Egg Casserole

Ingredients
- 1/3 cup of melted butter
- ½ teaspoon of salt
- 1 teaspoon of baking powder
- 1 cup of all purpose flour
- 2 cans of diced and drained green chile peppers
- 1 pound of shredded Monterey Jack cheese
- 1 container of low fat cottage cheese
- 10 beaten eggs
- ½ pound of fresh and sliced mushrooms
- 4 chopped green onions
- 1 tablespoon of butter
- ¾ pound of ground pork sausage
Preparation
- Put the sausage in a deep and large skillet. Cook this with medium to high heat until it is evenly brown. Drain and then set aside.
- Melt butter and cook mushrooms and green onions until they become tender.
- Take a bowl and mix together chiles, Monterey Jack cheese, cottage cheese, and eggs in it.
- Stir the sausage, mushrooms, and green onions in. Cover and then refrigerate overnight.
- Preheat the oven to 75 degrees C. Grease a baking dish of 9x13 inches lightly.
- Take a bowl and sift salt, baking powder, and flour together. Blend melted butter in.
- Stir the egg mixture and flour mixture together. Pour this in the baking dish.
- Bake this for about 40 to 50 minutes until it becomes light brown.
- Allow it to stand for about 10 minutes before you serve.
Belgian Waffles

Ingredients
- 3 egg whites
- 4 cups of all purpose flour
- 2 teaspoons of vanilla extract
- 1 ½ teaspoons of salt
- ½ cup of white sugar
- ¾ cup of melted and then cooled to lukewarm butter
- 2 ¾ cups of warm milk
- 3 egg yolks
- ¼ cup of warm milk
- 1 package of active dry yeast
Preparation
- Take a small bowl and dissolve ¼ cup of warm milk and yeast together.
- Let this mixture stand until it becomes creamy. This may take around 10 minutes.
- Take a large bowl and whisk melted butter, ¼ cup of warm milk, and egg yolks together.
- Stir vanilla, salt, sugar, and yeast mixture in together.
- Stir flour and the remaining 2 ½ cups of milk and end the stirring with flour.
- Beat egg whites until they have formed soft peaks. Fold this into batter.
- Cover this bowl in a tight plastic wrap and let it rise in a warm place until the volume has doubled. This may take an hour.
- Preheat the waffle iron, and brush and spoon the center of the iron with about ½ cup of oil.
- Close lid and bake until the steaming stops and your waffle turns golden brown.
Baked Brunch Omelet

Ingredients
- ¼ cup of chopped green onion
- 1 dash of hot pepper sauce
- 1 pinch of salt
- 2 cups of milk
- 8 eggs
- 1 cup of cubed and cooked ham
- 1 ½ pounds of shredded cheddar cheese
- ½ loaf of white bread that is cut in cubes
Preparation
- Preheat the oven to 175 degrees C. Grease a baking pan of 9x13 inches lightly.
- Place at the baking pan’s bottom half of the bread cubes. Sprinkle this with half of the ham and half cheese. Repeat the process.
- Take a large bowl and beat green onions, hot sauce, salt, milk, and eggs together. Pour into the pan your egg mixture.
- Place the pan on the baking sheet’s bottom with a rim and then place this in the preheated oven.
- Pour water in the baking sheet and then bake for about 60 minutes until the eggs have been settled.
