Red Velvet Pancakes

Ingredients
- All-purpose flour, 2 cups
- Cocoa powder, 3 tbsp
- Baking powder, 2 tsp
- Baking soda, ½ tsp
- Salt, ½ tsp
- Milk, 2 cups
- White vinegar, 2 tbsp
- Granulated sugar, ½ cup
- 2 large-sized eggs
- Red food coloring, 1 ½ tbsp
- Vanilla extract, 2 tsp
- Butter (salted, melted), 1/3 cup
- Fresh mint leaves and raspberries for garnish
Ingredients for Cream Glaze
- Cream cheese (softened), ¾ cup
- Butter (softened), 6 tbsp
- Powdered sugar, 2 cups
- Milk, ½ cup + more if required
- Vanilla extract, ½ tsp
Preparation
- Set the electric non-stick griddle to preheat setting at 350 degrees F.
- In a large bowl, whisk together all the dry ingredients. In another bowl, add vinegar to milk and whisk together, then let sit before pouring into a separate large bowl. Stir in all the wet ingredients, including the red food coloring. Whisk to incorporate all the ingredients.
- Stir the dry mixture into the wet one slowly, stirring constantly. Whisk until all ingredients are just combined.
- Grease griddle if required. Pour the batter on the griddle depending on the size of the pancakes you want. Cook until the bubble pop on the surface. Flip and continue cooking for one minute on the other side. Continue and prepare using all the batter.
- Meanwhile, prepare the glaze. In an electric hand mixer bowl, blend together butter and cream cheese at low-med speed. Whisk for 2 minutes until fluffy. Stir in the remaining ingredients and continue whisking for another minute. Adjust the consistency by pouring in more milk if required.
- To serve, transfer the pancakes on a platter and top with the cream cheese glaze. Garnish with mint leaves and fresh raspberries. Serve warm and enjoy.
Cheesy Frittata With Ham And Veggies

Ingredients
- 8 large-sized eggs
- Ham (chopped), ½ cup
- Heavy cream, ¾ cup
- Sea salt, to taste
- Black pepper, to taste
- Unsalted butter, 2 tbsp
- Asparagus (trimmed, sliced into small chunks), ½ lb
- 6 medium-sized radishes, thinly sliced
- 4 scallions, sliced
- Goat cheese (crumbled), ½ cup
- Garlic (finely chopped),1 clove
Preparation
- Set the oven to preheat at 350 degrees F.
- In a bowl, whisk together eggs, ham, cream, pepper and salt. Whisk until combined.
- Place a nonstick, oven-friendly skillet over med-high heat. Add butter and melt. Stir in asparagus and sauté for 2-4 minutes until tender. Add scallions, radishes, and garlic and continue cooking for another 2 minutes until scallions are just wilted.
- Adjust heat to low and add egg mixture over the veggies. Cook undisturbed for 3-4 minutes until it begins to set. Sprinkle goat cheese and place the skillet in the oven to bake. Bake for 15 minutes until set.
- Remove and serve immediately for best flavors.
Tortilla Espanola

Ingredients
- Potatoes (scrubbed and patted dry, do not peel), 3 lbs cut into round ½” thick slices
- 3 Medium-sized yellow onions
- 12 large-sized eggs
- Kosher salt, 1 tbsp
- Freshly ground black pepper, 1 tsp
- Smoked Spanish paprika, 1 tsp
Preparation
- Fill a large pot with water and add salt. Add potato slices and place it over med-high heat and bring to a boil. Cook until potatoes are extremely tender.
- Meanwhile, cut onions into thin half-moon shape. In a large bowl, whisk eggs with salt, black pepper and paprika. Set aside.
- Heat olive oil in a large nonstick skillet. Stir in onions and sauté for 2 minutes until tender. Remove and add onions to the egg mixture along with drained potato slices. Combine well.
- Add more oil to the same skillet and heat. Pour in the potato-egg mixture using a spatula to evenly distribute the contents. Cover the lid and cook for 20 minutes or until eggs are set.
- Slide the skillet in a preheated broiler and broil for 10 minutes to finish the cooking completely. Cook until well done. Remove and flip on a large platter. Feel free to add spinach, garlic, kale, cooked chorizo to enhance the flavors and texture.

Cinnamon Buns With Crunchy Almonds

Ingredients
- Slivered almonds, 1 cup
- Almond paste, ½ cup
- Light brown sugar, 6 tbsp
- Ground cinnamon, 2 tsp
- Crescent rolls (unbaked), 2 pkg.
- Butter, 1 stick
- Cooking spray
- Confectioners’ sugar, 1 cup
- Whole milk, 1 tbsp
Preparation
- Set the oven to preheat at 375 degrees F.
- In a mixing bowl, stir in almond paste, almonds, cinnamon and brown sugar. Stir well to combine and set aside.
- Place 1 package of roll dough on a parchment sheet. Roll to a smooth, rectangular seams. Spread ½ of the butter over the tough and spoon half of the almond mixture. Starting from one end, roll up the dough tightly. Cut into 6 equal pieces and repeat with the other dough roll.
- Grease 2 muffin tins with cooking spray. Place the cinnamon in each and set to bake for 15 minutes until golden brown. You might want to give it the perfect cinnamon roll shape. If you want, go ahead and do it and bake on a baking sheet.
- While the buns are in the oven, prepare the glaze. Combine milk and confectioners’ sugar in a bowl and whisk until smooth. When the buns are ready, remove from oven and drizzle with the glaze.
- Serve immediately for warm, melting flavors.
Ginger-Pumpkin Waffles

Ingredients
- All-purpose flour, 1 ¼ cups
- Baking powder, 1 ½ tsp
- Salt, ¼ tsp
- Baking soda, ½ tsp
- Ground ginger, 2 tsp
- Cinnamon, ½ tsp
- 2 large-sized eggs
- Crystallized ginger (finely chopped), ¼ cup
- Pumpkin puree (canned), ½ cup
- Buttermilk, ¾ cup
- Sugar, ½ cup
- Vanilla extract, ¾ tsp
- Unsalted butter, 3 tbsp
Preparation
- In a large mixing bowl, combine baking powder, flour, salt, baking soda, cinnamon, and ground ginger. Take 2 tbsp of this mixture and place in a separate small bowl. Combine with crystallized ginger and set aside.
- Whisk pumpkin puree, buttermilk, eggs, vanilla, and sugar in another bowl. Stir and keep mixing the flour until fully incorporated. Stir in the reserved ginger-flour mixture along with butter. Mix well until it reaches desired consistency. Avoid over mixing.
- Heat a waffle iron and use ½ cup batter for one waffle (or as per your preference). Keep warm until all of them are done. Serve with honey or maple syrup and your choice of chopped berries and enjoy!

Ingredients
- 4 large-sized eggs
- Salt, 1 tsp
- Milk, ¼ cup
- Ground black pepper, 1 tsp
- Butter, ½ tbsp
Preparation
- In a mixing bowl, whisk together milk and eggs with a fork. Season with salt and pepper.
- Place a large pan over low-med heat. Add butter and melt. Stir in the egg mixture and cook. Continue stirring and scrape and cut the egg up while cooking.
- Cook for 2-3 minutes until no liquid can be seen.
