Slow Cooker Scrambled Eggs

Ingredients
- Black pepper
- 2 eggs
- 1/4 tsp of salt
- 1 tsp of heavy cream
- 1 tsp of butter (unsalted)
Preparation
- Add butter in a pan and place it over low heat
- In a bowl, whisk eggs, until it’s fluffy
- Season the eggs with black pepper and salt
- Add cream and mix to combine
- Put the eggs in the pan, cooking them over low heat for 15 minutes and stirring occasionally
- Place the eggs in a plate and serve
Pumpkin and Thyme Crusted Roasted Rack of Lamb

Ingredients
- 1 cup of breadcrumbs
- 1 cup of pumpkin purée
- 1 tbsp of olive oil
- 2 racks of lamb (excess fat removed)
- 2 tsp of fresh thyme (chopped)
- Black pepper
- Salt
- Vegetable oil
Preparation
- Preheat your oven to 375 degrees Fahrenheit
- Season the meat with black pepper and salt
- In a skillet, drizzle oil to sear all sides of the meat
- Place the lamb in the oven to cook for 20 minutes
- Take it out of the oven to let to cool for 30 minutes
- Combine salt, black pepper, olive oil, breadcrumbs, and thyme in a bowl
- Place the mix on a plate
- Spread the pumpkin mix on top of the lamb and coat it in the bread crumb mix
- Place the meat in the oven and cook until your desired doneness
- Allow it to cool slightly, slice it, and serve

Ingredients
- 2 eggs
- 2 cups of rolled and old-fashioned oats
- 1/2 cup of sugar (granulated)
- 1 tsp of vanilla extract
- 1 tsp of salt
- 1 tsp of baking soda
- 1 cup of vegetable shortening
- 1 cup of light brown sugar (packed)
- 1 1/2 cups of all-purpose flour
- 1 packet of chocolate chips (semisweet)
Preparation
- Preheat your oven to 350 degrees Fahrenheit
- Use cooking spray to coat two baking sheets
- Combine salt, baking soda, and flour on waxed paper
- Whisk the vanilla, sugars, and shortening using an electric mixer
- Add eggs and beat until fluffy and light
- Add in all the dry ingredients, including the chocolate chips
- Use a teaspoon to drop the batter on to the baking sheets and bake for 10 minutes
- Allow it to cool for 2 minutes
- Serve
Black Bean Burgers with Veggies and Greek Mayo

Ingredients
- 2 cans of black beans (rinsed and drained)
- 3 tbsp of lemon juice
- 2 tsp of oregano (dried)
- 2 tsp of salt
- 1 tsp of black pepper
- 3 garlic cloves (minced)
- 2 eggs (beaten)
- 1 onion (finely chopped)
- 2 tbsp of extra-virgin olive oil
- 6 hamburger buns
- 1/2 cup of panko breadcrumbs
Greek mayo:
- Juice of 1 lemon
- 2 tsp of oregano (dried)
- 2 garlic cloves (grated)
- 1/2 tsp of salt
- 1 tsp of black pepper
- 1 cup of mayonnaise
Preparation
- Combine bread crumbs, beans, 3 tbsp of lemon juice, 2 tsp of oregano, 3 cloves of garlic, eggs, onion, 2 tsp of salt, and black pepper in a bowl
- Use a fork to mash the ingredients to shape them into patties, at least 6
- Cover and place the patties in the fridge for an hour
- Combine Greek mayo ingredients in a bowl and set aside
- Heat oil in a pan placed over medium high heat
- Cook each side of the patties for 4 minutes
- Add burgers, onions, tomatoes, lettuce and Greek mayo to the bottom of the buns
- Close the buns and serve
Squash Soup

Ingredients
- 1 tsp of curry powder
- 1/8 tsp of cayenne pepper
- 2 cups of onion (coarsely chopped)
- 2 lbs. acorn squash
- 2 tbsp of molasses
- 2 tsp of canola oil
- 2/3 cup of apple cider
- 2/3 cup of half-and-half
- 3 lbs. butternut squash (sliced lengthwise with membrane and seeds removed)
- 3/4 tsp of salt
- 5 cups of chicken broth (low sodium)
- Nonstick cooking spray
Preparation
- Preheat your oven to 425 degrees Fahrenheit
- Place the squash, sliced sides down, on a baking sheet sprayed with cooking spray
- Combine oil and onion and toss to coat
- Spread the onions around the sliced squash and place it in the oven to cook for 45 minutes
- Allow it to cool, remove the squash pulp, and throw away the skins
- Place the squash pulp and onions in a Dutch oven
- Add in broth, curry powder, salt, cider, molasses, and cayenne
- Bring it to a boil, decrease heat, and let it cook for 5 minutes
- Place 1/2 of the mixture in a food processor, remove its center piece, use a paper towel to cover opening, and process until smooth
- Place the mix into a bowl and repeat with rest of the remaining mixture
- Place the soup back into the pot, add in half and half, cover it, and cook on medium for 5 minutes
- Serve
