Turkey Soup

Ingredients

  • 1 1/2 cups of ribs of celery (cut at a base)
  • 1 1/2 cups onion (finely sliced)
  • 1 lb of leftover roast turkey meat (coarsely torn into small pieces)
  • 1 roast turkey carcass (sliced into coarse chunks)
  • 1/2 cups carrots (diced)
  • 1/2 lb. chunk of bacon (sliced into 1/2 pieces)
  • 2 bay leaves
  • 2 qt. of low-sodium chicken stock
  • 2 thyme sprigs
  • 3 tbsp of parsley leaves (chopped)
  • Black pepper
  • Salt

Preparation

  1. Combine all the leftover turkey parts, chicken stock, thyme springs, and bay leaves into a large pot.
  2. Place the large pot over high heat, bring to a boil, and decrease heat, cooking it for about an hour
  3. Strain the chicken broth into a pan and remove and throw away the solids
  4. Add onions, celery, carrots, and bacon to the pot
  5. Allow all of the ingredients to simmer and cook for about 10 minutes or until the vegetables soften
  6. Add all the leftover turkey parts, season them with black pepper and salt, and stir in parsley
  7. Serve

Sweet Potato Frittata

Sweet Potato Frittata

Ingredients

  • 1 cup of half-and-half
  • 1 tsp of salt
  • 1/2 red onion
  • 1/2 tsp of black pepper
  • 2 cup of sweet potatoes
  • 2 cups of firmly packed kale (chopped)
  • 2 garlic cloves
  • 2 tbsp of olive oil, divided
  • 3 oz. of goat cheese
  • 6 eggs

Preparation

  1. Preheat your oven to 350 degrees Fahrenheit
  2. Whisk eggs, half-and-half, salt, and black pepper in a bowl
  3. Add 1 tbsp of oil into a skillet, place it over medium heat, add potatoes, and cook for 10 minutes
  4. Remove and cover the potatoes to keep them warm
  5. Add 1 tbsp of oil into the skillet and add kale, red onions, and garlic cloves and sauté for about 4 minutes
  6. Add potatoes, pour egg mixture, and cook for additional 3 minutes
  7. Use goat cheese to garnish the egg mixture, bake at 350 degrees Fahrenheit for about 14 minutes, and serve

Turkey Stuffing and Mashed Potatoes Patties

Ingredients

  • 1/4 tsp of black pepper
  • 2 cups of leftover mashed potatoes
  • 2 cups of leftover stuffing
  • 2 cups of leftover turkey (chopped)
  • 2 lightly beaten eggs
  • 2 tbsp of butter
  • 2 tbsp of finely chopped onion
  • 2 tbsp of vegetable oil

Preparation

  1. In a bowl, add eggs, beat all of the eggs together, and then add black pepper and onions and mix
  2. Add potatoes, stuffing, and turkey to the bowl
  3. Add oil and butter into a skillet and place it over medium heat
  4. Use a spoon to scoop the potato mixture into the skillet
  5. With the back of a spatula, press the potatoes slightly down
  6. Fry each side of potatoes for three minutes
  7. Drain the liquid on a paper towel
  8. Serve immediately

Pumpkin Soup

Ingredients

  • 1 can of pure pumpkin
  • 1 onion
  • 1 potato
  • 1/2 pint of heavy cream
  • 1/2 tsp of salt
  • 1/4 tsp of ground nutmeg
  • 1/8 tsp of black pepper
  • 2 tbsp of butter (unsalted)
  • 4 1/2 cup of chicken broth

Preparation

  1. Melt butter in pot, placed over medium heat
  2. Add onion, potato, and cook, stirring frequently, until onions soften, for 8 minutes
  3. Add chicken broth and bring to a boil
  4. Cover, decrease heat to low, and cook until the potatoes soften for 12 minutes
  5. Add pumpkin, using an immersion blender, pulverize mixture, until smooth (or use a blender to pulverize mixture into small batches and the pour into pot)
  6. Add black pepper, salt, and nutmeg
  7. Increase heat to medium-high to bring it to a boil
  8. Cover the pot, decrease heat to low, and cook for about 10 minutes
  9. Add cream and heat it
  10. Season the soup with black pepper and salt
  11. Serve immediately

Spicy Leftover Turkey Chili

Ingredients

  • 1 1/2 tsp of dried oregano
  • 1 1/4 tsp of ground cumin
  • 1 can of black beans
  • 1 can of kidney beans
  • 1 can of pinto beans
  • 1 can of tomatoes (peeled)
  • 1 onion
  • 1 pound of ground turkey
  • 1 tbsp of sugar
  • 1/2 tsp of salt
  • 1/4 cup of tomato paste
  • 2 1/2 tsp of chili powder
  • 2 green bell peppers
  • 2 red bell peppers
  • 2 tbsp of olive oil
  • 3 garlic cloves

Preparation

  1. Pour 1 tbsp of olive oil into a pot over medium heat
  2. Cook the turkey, until it is slightly brown
  3. Use wooden spoon to break the turkey
  4. Season the turkey with salt
  5. Use a slotted spoon to transfer the turkey into another dish and throw away any liquid
  6. Add the rest of the oil into the pot and place it over medium heat
  7. Add onion and garlic, cooking it for 5 minutes or until it softens
  8. Add tomato paste, tomatoes, sugar, green bell peppers, red bell peppers, chili powder, dried oregano, and ground cumin into the pot
  9. Use a wooden spoon to break the tomatoes
  10. Add the turkey you put aside in the beginning into the pot and bring everything to a boil
  11. Decrease the heat to medium-low and allow it to simmer, stirring frequently, for 30 minutes
  12. Add the can of pinto beans, kidney beans, and black beans into the pot
  13. Mix all of them together and let everything simmer for an additional 15 minutes
  14. Serve
