Foil Baked Salmon

Salmon is often touted as one of the best brain foods available, thanks to its high amount of omega-3 fatty acids, vitamin B12, and vitamin D. It’s also packed with protein, which helps you fight hunger pangs all night long. There are plenty of healthy salmon recipes floating around the Internet, but we chose this one because it’s quick and easy. You only need a few ingredients and 20 or so minutes of cook time.

Ingredients

  • 4 salmon fillets
  • 4 tablespoons of olive oil
  • 3 tomatoes, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper

Preparation

  1. Place each piece of salmon on its own sheet of foil and top with 1 tablespoon of olive oil, diced tomatoes, and seasonings.
  2. Fold foil packets closed, and place them on a large baking sheet.
  3. Bake at 400 degrees Fahrenheit for 20 to 25 minutes.

Rice and Bean Stuffed Peppers

We love recipes for stuffed peppers because they’re always easy and delicious. If you want extra protein in your stuffed peppers recipe, add chicken, turkey, or hamburger.

Ingredients

  • 4 bell peppers, any color
  • 1 can of black beans, drained
  • 1 cup of rice
  • 1 cup of cheese
  • 15 olives, sliced
  • 2 cloves of garlic, smashed
  • 1 small onion, diced
  • 1/2 cup of sour cream
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste

Preparation

  1. Prepare rice according to the directions on the package. During this time, saute onions and garlic in a skillet drizzled with olive oil.
  2. Combine all ingredients inside of peppers with the tops removed, saving the cheese for last.
  3. Bake for 30 minutes at 400 degrees Fahrenheit.

Preparation

  1. Heat on high for 2 hours or low for 4 to 6 hours in a slow cooker.

Ingredients

  • 1 baguette or 4 ciabatta rolls
  • Handful of lettuce leaves, any variety
  • 1 can of tuna, drained
  • 4 hardboiled eggs
  • Salt and pepper
  • Olive oil
  • 1 serrano chile, thinly sliced

Preparation

  1. Drizzle olive oil on a sliced baguette or ciabatta roll.
  2. Top with lettuce, tuna, hardboiled eggs, and serrano chile slices. Lightly sprinkle salt and pepper over the sandwich.

  • 1 red bell pepper, thinly sliced
  • 1 cup of grape tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 cup of feta cheese, crumbled

For the Dressing:

  • 6 tsp. of olive oil
  • 3 tsp. of red wine vinegar
  • 1/4 cup of lemon juice
  • 1 tsp. of oregano
  • 1/2 tsp. of garlic powder
  • 2 tsp. of white sugar

Preparation

  1. Combine salad ingredients in a large bowl.
  2. Prepare dressing and pour over salad.

Spinach Artichoke Quesadilla

We’re guilty of hiding out in the corner at parties, dipping chip after chip in the spinach artichoke dip. That’s why we love these spinach artichoke quesadillas.

Ingredients

  • 8 tortillas
  • 1 cup of spinach artichoke dip
  • 2 cups of shrimp, cooked and chopped
  • 2 cups of mozzarella cheese, shredded

Preparation

  1. Place ingredients on each tortilla, stopping about half an inch before the edges so the filling doesn’t ooze out.
  2. Place quesadilla in a quesadilla maker and follow the instructions, or heat both sides until browned in a skillet drizzled lightly with olive oil.

Ingredients

  • Tortilla
  • Mayo or cream cheese
  • Sliced turkey
  • Ranch
  • Shredded cheese
  • Sliced avocado

Preparation

  1. Spread ingredients, using as much or as little as you want, on a flour tortilla.
