Green Eggs & Ham

Ingredients
- Bread slices
- 2 tbsps butter
- 4 eggs
- salt and pepper
- blue food coloring
- 1/4 cup minced ham
- cookie cutters
Preparation
- Heat oven to 350 degrees F.
- Cut the bread into shapes with the cookie cutters and spread them with butter.
- Arrange on cookie sheet and bake until toasted, about 3-5 mins.
- Break eggs into bowl.
- Add pinch of salt and pepper, and add 2 or 3 drops of blue food coloring to make them a green color.
- Whisk eggs until mixed.
- Heat nonstick skillet over medium-low heat.
- Add ham and cook until begins to brown.
- Pour eggs over ham. Let set for two minutes.
- Fold cooked eggs over as they cook.
- Chop eggs with spatula and remove to plate with cookie cutter bread.
Green Smoothie

Ingredients
- 4 kale leaves with center ribs removed
- 1 tsp ground flaxseed
- 1 cup frozen berries (your choice)
- 1/2 cup parsley leaves
- 1 banana cut up
Preparation
- Purée ingredients with 1 cup of water in a blender until smooth.
- Add more water if too thick.
Spinach Roll-Ups

Ingredients
- 2 10 ounce packages of frozen chopped spinach, thawed and drained
- 1 package of ranch dressing
- 1 cup mayo
- 1 cup sour cream
- 1/2 cup bacon bits
- 3 tbsps chopped onions
- 10 flour tortillas
Preparation
- In a medium-size mixing bowl, combine spinach, ranch mix, mayonnaise, sour cream, bacon bits and onion.
- Spread mixture onto each tortilla and roll it up.
- Refrigerate the rolled tortillas until ready to serve.
- Slice each roll-up into 1 inch servings no more than 3 hours before serving.
Avocado-Lime Sauce
Ingredients
- 1/2 cup extra-virgin olive oil
- 1/2 medium avocado, pitted, and diced
- 1 jalapeño, seeded and chopped
- 1 garlic clove, chopped
- 1 teaspoon chopped shallot
- 2 limes, halved
- 2 tbsps chopped fresh basil
- 1 tbsp chopped fresh cilantro leaves
- Sea salt and freshly ground black pepper
Preparation
- DO AHEAD: Sauce can be made up to 4 days ahead. Press a piece of plastic wrap directly onto surface of sauce. Cover and refrigerate. Bring sauce to room temperature before serving.
- Combine oil, avocado, jalapeño, garlic, and shallot. Squeeze limes into mixture.
- Stir in basil and cilantro just before serving
- Season with salt and pepper.

- 2 green apples, halved, cored, and finely chopped
- 1 cucumber, finely chopped
- 1 cup (packed) fresh spinach
- 3/4 cup brewed green tea, room temperature
- 1/4 cup fresh mint leaves
- 2 tbsps honey
- Lemon Juice
Preparation
- Purée apples, cucumber, spinach, tea, 1/4 cup mint leaves, and honey in a blender until very smooth.
- Strain juice into a pitcher.
- Add lemon juice and a mint sprig if you like.
