Red Velvet Ice Cream Pie

Red velvet cake is one of the most delicious desserts we’ve even eaten, but baking one from scratch can be difficult. We decided to switch things up a bit and make a red velvet ice cream pie instead of a red velvet cake. Save time by using store-bought red velvet cupcakes instead of making them from scratch.

Ingredients

  • 4 red velvet cupcakes
  • 1 1/2 pints vanilla ice cream
  • 1 1/2 pints blueberry sorbet
  • 2 cups cold heavy whipping cream
  • 2 tablespoons confectioners’ sugar

Preparation

Remove frosting from cupcakes, and crumble them into small pieces. Press all but 1/4 cup crumbs into the bottom and up the sides of a 9-inch deep-dish pie plate, then freeze for at least 30 minutes. Spread vanilla ice cream over the crust with a spatula, then spread sorbet on top. Freeze the pie while you make the whipped cream. Beat the heavy cream and confectioners’ sugar in a large bowl with a mixer on medium-high speed until soft peaks form. Top the red velvet pie with the whipped cream and sprinkle the reserved cupcake crumbs around the edge. Freeze for at least 4 hours.

Ingredients

  • Cookies, any variety
  • Ice cream, sorbet, or frozen custard
  • Sprinkles and mini chocolate chips, for rolling

Preparation

Smooth ice cream on a cookie, then top with another cookie. Roll the sides of the cookie in sprinkles or chocolate chips. Freeze for 15 minutes and serve.

Strawberry Semifreddo Shortcake

Strawberry lovers, we’ve got your back. This strawberry-packed semifreddo shortcake recipe is just for you.

Ingredients

  • 2 packages of soft ladyfingers
  • 2 pints of strawberry ice cream, softened
  • 1 pint of strawberry sorbet, softened
  • 1 pint of fresh strawberries, hulled
  • 2 tablespoons powdered sugar
  • 1/2 jar of marshmallow cream
  • 1 cup of heavy cream

Preparation

  1. Arrange ladyfingers around sides and on bottom of a 9-inch springform pan. Spread strawberry ice cream over ladyfingers, and freeze for 30 minutes.
  2. Spread softened strawberry sorbet over ice cream, and freeze for another 30 minutes.
  3. Puree strawberries and powdered sugar in a food processor. Reserve 1/4 cup of the mixture. Whisk remaining strawberry mixture into marshmallow cream until well blended.
  4. Beat cream at high speed with an electric mixer until stiff peaks form, then fold into marshmallow mixture. Pour over sorbet, then drizzle reserved strawberry mixture over top. Freeze semifreddo shortcake a minimum of 4 hours before serving.

If you like pina colada icebox pie…and getting caught in the rain…okay, maybe we’re showing our age with these lyrics. You don’t have to be a Jimmy Buffet fan to enjoy this icebox pie.

Ingredients

  • 2 cups pecan shortbread cookie crumbs (about 16 cookies)
  • 1 cup sweetened flaked coconut
  • 1/4 cup butter, melted
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 1 can crushed pineapple in juice
  • 1 package cream cheese, softened
  • 1 1/2 cups cream of coconut, divided
  • 2 large eggs
  • 1 cup whipping cream
  • Shaved coconut, pineapple wedges, fresh pineapple mint sprigs for garnish

Preparation

  1. Preheat oven to 350 degrees Fahrenheit. Combine cookie crumbs, coconut, and butter, then firmly press on bottom and up sides of a lightly greased 9-inch pie plate. Bake 10 to 12 minutes, then cool for 30 minutes on a rack.
  2. Stir together sugar and cornstarch in a small heavy saucepan, then add pineapple. Bring to a boil over medium-high heat, then reduce to a simmer for 20 minutes.
  3. Combine cream cheese, cream of coconut, and eggs, then set aside.
  4. Spread cooled pineapple mixture over bottom of pie crust, then spread cream cheese mixture over pineapple mixture.
  5. Bake for approximately 40 minutes. Refrigerate for 4 hours after baking.
  6. Beat whipping cream at high speed until foamy, then add remaining 1/2 cup cream of coconut, beating until soft peaks form. Spread mixture over icebox pie and serve.

You can’t go wrong with a cake made of ice cream sandwiches and Oreos. We’re trying so hard not to drool all over the keyboard.

Ingredients

  • 1 jar of hot fudge sauce
  • 2 packs of oreo cookies
  • 48 ice cream sandwiches
  • 2 containers of Frozen Cool Whip Topping, thawed

Preparation

Blend 1 bag of Oreos in a food processor until you have a crumb mixture. Line the bottom of a casserole dish with ice cream sandwiches. Spread with a layer of Cool Whip Topping, then sprinkle all the crushed Oreo cookies on top. Heat hot fudge and drizzle over the crushed Oreo layer. Layer another row of ice cream sandwiches on top, and coat with remaining Cool Whip. Decorate top with whole Oreo Cookies from the other package. Keep frozen until ready to serve.
