Steak With Béarnaise Marinade And Sauce

Ingredients

  • White wine vinegar (or champagne vinegar), ¼ cup
  • White wine, ¼ cup
  • Shallots (minced), 2 tbsp
  • Kosher salt, to taste
  • Fresh tarragon leaves (chopped), 3 tbsp (divided)
  • Freshly ground black pepper, to taste
  • 3 large-sized egg yolks
  • 6 rib eye steaks, flattened to 1”
  • Butter (unsalted, melted), ½ lb
  • Olive oil
  • Ground black pepper (freshly coarse), for garnish

Preparation

  1. To prepare the béarnaise marinade, combine white wine, vinegar, 1 tablespoon of tarragon leaves, shallots, ¼ teaspoon salt and pepper. Add the mixture to a small pan.
  2. Combine and bring to a gentle boil and simmer for 5 minutes on low heat. The mixture will reduce to a few tablespoons.
  3. Let it cool. Transfer the mixture in a blender along with 1 teaspoon salt and melted butter. Add remaining tarragon leaves and blend at medium speed for a 3 seconds to mix everything. If the marinade seems too thick, add some white wine to adjust the consistency.
  4. Add 6 tablespoons of the marinade to a ziplock bag along with pepper. Reserve the remaining marinade to be served as sauce. Keep it at room temperature until it is ready to be served.
  5. Season the steaks liberally with the marinade and pepper for at least 30 minutes.
  6. In a sauté pan, add 2 tsp of olive oil and swirl to coat. Cook the steaks for 8-10 minutes on each side until done. You can cook longer according to your desired doneness.
  7. Remove from the pan and place it on a serving platter. Cover with foil and let it sit for 10 minutes.
  8. Serve warm with the remaining béarnaise sauce on top and sides.

Steak With Delicious Teriyaki Marinade

Ingredients

  • 4 boneless beef steaks (or any other meat), flattened
  • Soy sauce, 1 cup
  • Water, 1 cup
  • White sugar, ¾ cup
  • Worcestershire sauce, ¼ cup
  • Distilled white vinegar, 3 tbsp
  • Onion flakes (dried), 1/3 cup
  • Vegetable oil, 3 tbsp
  • Garlic powder, 2 tsp
  • Fresh ginger (grated), 1 tsp
  • Salt, to taste
  • Black pepper, to taste
  • Sesame seeds, for garnish

Preparation

  1. In a mixing bowl, add soy sauce, sugar, water, vinegar, Worcestershire sauce, oil, garlic powder, onions, and ginger. Whisk until all the ingredients are well combined and sugar is dissolved. Your marinade is now ready.
  2. Pour the marinade in a large plastic bag along with the steaks. Seal bag and coat nicely. Refrigerate for at least 2 hours. For best results, refrigerate overnight.
  3. Remove the steaks from the bag and discard marinade. Grill steaks for 8 minutes on each side over low-med heat until it reaches the desired doneness.
  4. Serve warm with veggies or mashed potato on the side.
  5. Garnish with sesame seeds and enjoy.

Moroccan Spice Marinade Steak

Ingredients

  • Olive oil, 3 tbsp
  • Cumin (ground), 2 tbsp
  • Paprika, 2 tbsp
  • Sugar (granulated), 2 tbsp
  • 2 garlic cloves, minced
  • Lemon juice, 2 tbsp
  • Salt, ½ tsp
  • Ground black pepper, ½ tsp
  • Cinnamon, ¼ tsp
  • 4 boneless steak servings (your choice of meat)

Preparation

  1. In a mixing bowl, combine all the ingredients. Whisk until well incorporated.
  2. Add the mixture in a ziplock back along with the steaks. For beef or poultry, marinate for at least 4 hours. For fish, marinate for 30 minutes only. Refrigerate.
  3. To grill, place the steaks over low-med heat and cook on each side until it reaches desired doneness. Serve warm and juicy. Enjoy!

  • 6 boneless beef steaks
  • 1 small-sized onion, diced
  • Vegetable oil, 1 tbsp
  • 2 garlic cloves, minced
  • Bottled strained tomatoes, 1 cup
  • Tomato paste, ¼ cup
  • Water or apple cider vinegar, 3 tbsp
  • Cider vinegar, 3 tbsp
  • Fancy molasses, 3 tbsp
  • Brown sugar, 2 tbsp
  • Chipotle peppers in adobo sauce (minced), 2 tbsp
  • Adobo sauce, 1 tbsp
  • Liquid smoke, ½ tsp
  • Dijon mustard, ½ tsp
  • Salt, to taste
  • Pepper, to taste

Preparation

  1. To prepare the marinade, add oil to a small saucepan and heat until warm. Add garlic and onion and sauté for 3 minutes until tender and fragrant.
  2. Add tomato paste, strained tomatoes, vinegar, apple cider vinegar (or water), chipotle peppers, molasses, adobo sauce, brown sugar, liquid smoke, and mustard. Stir to combine and bring to a gentle boil. Adjust heat to low and simmer for 15 minutes until the mixture thickens.
  3. Let it cool and transfer the mixture to a food processor. Process until smooth and transfer to a bowl.
  4. Add ½ of the marinade in a ziplock bag along with the steaks and shake well to coat. Refrigerate for at least 2 hours to overnight.
  5. To grill, grease a grill pan and cook for 8 minutes on each side or until it reaches desirable doneness. When done, transfer to a serving platter.
  6. Add the remaining sauce on top and grilled veggies on the side and serve warm.

Orange-Chili Marinade Juicy Steak

  • 4 servings of boneless steak
  • Orange rind (grated), 1 tbsp
  • Orange juice, 2 tbsp
  • Vegetable oil, 2 tbsp
  • Wine vinegar, 2 tbsp
  • Tomato paste, 1 tbsp
  • Oregano (dried), ½ tsp
  • Chili powder, 1 tbsp
  • Salt, ½ tsp
  • Pepper, ½ tsp

Preparation

  1. Combine orange rind, wine vinegar, orange juice, tomato paste, vegetable oil, salt, pepper, oregano, and chili powder in a large mixing bowl.
  2. Marinate chicken or beef steaks in the mixture and coat well. Cover and refrigerate for at least 4 hours. For best flavors, marinate for overnight.

  • Lime rind (grated), 1 tsp
  • Lime juice, 2 tbsp
  • 2 garlic cloves, minced

  • 1 jalapeno pepper, seeded and minced
  • 4 boneless steaks
  • Salt, to taste

Preparation

  1. In a mixing bowl, add all the ingredients except for steak and combine well.
  2. Add steaks to the bowl and toss to coat well. Cover and refrigerate for at least 4 hours. You can refrigerate to 24 hours in advance if you like.
  3. To prepare, grill over a greased grilling pan. Cook on each side until it reaches desirable doneness. The cooking time will vary according to the type of meat you choose.
  4. When done, transfer to a platter and serve with your favorite side. A mix of green veggies and some French fries will enhance the flavors.
