Ingredients

  • Lean ground turkey, 1 ½ lbs
  • 1 onion, chopped

  • Dijon mustard, 2 tbsp
  • Whole-wheat bread crumbs, ½ cup
  • 1 large egg (white only)
  • Kosher salt, to taste
  • Black pepper, to taste
  • Red potatoes (quartered), 2 lbs
  • Ketchup, ¼ cup
  • Buttermilk, 1 cup
  • Extra-virgin olive oil, 1 tbsp
  • Marinara sauce (warm), ¼ cup
  • Lettuce leaves, a few

Preparation

  1. Set the oven to preheat at 400 degrees F.
  2. Combine turkey, spinach, onion, bread crumbs, parsley, egg white, and mustard in a large bowl. Season with salt and pepper and mix well.
  3. Prepare a 10-inch loaf pan with baking sheet and transfer the turkey mixture. Smooth out and top with ketchup. Set to bake for 50 minutes until cooked through.
  4. To prepare mashed potatoes, add potatoes to a large pot of water. Bring to a boil. Adjust head to low and simmer for 15 minutes until tender.
  5. Mash potatoes with oil and buttermilk. Season with salt and pepper and mix well.

Ingredients

  • Olive oil, 1 tbsp
  • 1 medium-sized onion, chopped

  • Ground nutmeg, ¼ tsp
  • Ground cumin, ½ tsp

  • Milk, ½ cup

  • Meatloaf mix (lean ground beef 1 lb, ground lamb or veal ½ lb, ground pork, ½ lb), 2 lbs

Preparation

  1. Set the oven to preheat at 350 degrees F.
  2. Place a skillet over low-med heat.
  3. Add oil and heat. Stir in onion, garlic, celery, and jalapeno.
  4. Cook for 10 minutes until vegetables are tender. Do not brown.

  • Bread crumbs, ½ cup
  • Tomato paste, ¼ cup
  • Salt, to taste
  • Black pepper, to taste

Preparation

  1. In a large mixing bowl, mix ground beef with onion, egg, parsley, parmesan, bread crumbs and tomato paste. Season with salt and pepper. Mix well until fully incorporated.
  2. Transfer to a loaf pan and smooth on the top.

Ingredients

  • 3 chicken-breast halves (1/4” thick)
  • Olive oil, 3 tbsp
  • 3 scallions, thinly sliced
  • Kosher salt, to taste
  • Black pepper, to taste
  • Fresh ginger (small piece, peeled), thinly sliced
  • ½ lime
  • 2 eggs
  • Dijon mustard, 2 tbsp
  • Tomato paste, 1 tbsp + 2 tsp
  • 3 cloves of garlic, peeled
  • 1 small-sized yellow onion, quartered
  • 1 small-sized carrot, cut into big pieces
  • ½ medium-sized apple, peeled and grated
  • Breadcrumbs, 1 cup
  • Maple syrup, 3 tbsp
  • Pistachios, 1/3 cup

Preparation

  1. In a large mixing bowl, combine chicken with 2 scallions, 2 tbsp oil, half of the ginger, and some salt and pepper to taste.
  2. Add lime juice and combine well until fully mixed.
  3. Set aside.
  4. Place a large saucepan over low-med heat. Add ginger and some lime juice along with an inch of water.
  5. Place a colander or steamer basket on top and bring the water mixture to a boil.
  6. Remove chicken from marinade and place it on the steamer.
  7. Steam for 5 minutes until cooked through.
  8. Transfer chicken to a cutting board and let cool for 5 minutes.
  9. Chop into small pieces.
  10. Set the oven to preheat at 400 degrees F.
  11. Prepare a loaf pan with oil or cooking spray and set aside.
  12. In a large mixing bowl, whisk together 1 tbsp tomato paste, mustard, eggs, and remaining oil.
  13. Season with salt and pepper.
  14. Add carrots, onion and garlic in a food processor and process until finely chopped. Add to the egg mixture and combine well. Lastly, add chicken along with remaining scallions, breadcrumbs and apple to the mixture and mix using your hands until thoroughly combined.
  15. Spoon half mixture into the pan and cover with pistachios in a single layer. Top with rest of the meat and round from the top and edges. Set to bake for 20 minutes.
  16. Meanwhile, mix remaining tomato paste and maple syrup together. Remove meatloaf from the oven and brush the glaze on top. Bake for another 10 minutes until done.
  17. Remove and cover with foil and let it rest for another 10 minutes. Remove from pan and cut into slices and serve warm.

Grilled Meatloaf

  • 2 medium-sized yellow onions
  • Tomato paste, 1/3 cup
  • Ground beef, 1 ½ lbs
  • Breadcrumbs (dry), ½ cup
  • White cheddar cheese (grated), 1 cup
  • Fresh parsley (chopped), ¼ cup
  • 1 egg, beaten
  • Black pepper, ½ tsp
  • Kosher salt, 3 tsp
  • Potatoes (cut into small chunks), ½ lbs
  • Olive oil, 2 tbsp

Preparation

  1. Set the grill to medium head.
  2. Dice half an onion and place it in a large mixing bowl along with beef, breadcrumbs, tomato paste, parsley, cheddar, and egg.
  3. Season with ¼ tsp pepper and 2 tsp salt. Combine well.
  4. Prepare two sheets of foil 3 feet long. Stack on top of one another and fold in half.
  5. Unfold to create a crease.
  6. Place the meat mixture in the center of foil and shape it in a loaf.
  7. Cut remaining onion in wedges and place both potatoes and onions around the loaf.
  8. Season with more salt and pepper and drizzle with olive oil.
  9. Fold the foil until everything is wrapped in a tight seal.
  10. Place on a grill and cook at medium heat. Turning at different sides every 6 minutes.
  11. Continue grilling until cooked on all sides.
  12. Let rest for a few minutes and slice.
