We love eating at Chipotle, but we have to admit all the E.coli stories in the news lately have made us a bit apprehensive about visiting the restaurant. That’s why we learned how to make this copycat Chipotle chicken burrito bowl recipe at home.

Ingredients

  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon of garlic powder
  • 1 pound of chicken breast, cut into bite-sized pieces
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup of corn
  • 1 can of black beans, drained
  • 2 cups cooked rice mixed with chopped cilantro
  • Lime juice
  • Avocado slices, for garnish

Preparation

  1. Sprinkle seasonings over chicken and cook it in olive oil over medium-high heat until fully cooked.
  2. Remove the chicken and heat the onion, pepper, and corn for 5 to 10 minutes.
  3. Add black beans and cook for 5 more minutes.
  4. Layer cooked rice, beans and veggies, and chicken in a bowl. Top it with avocado slices.

Spicy crab tacos are a sophisticated Mexican dish that’s surprisingly easy to prepare, so don’t let the long ingredient list intimidate you. Serve these spicy crab tacos to your family on a weeknight, or offer them as an appetizer at your next cocktail party.

Ingredients

  • 8 large flour tortillas, quartered
  • 2 large red radishes, diced
  • 1/2 of a red onion, finely chopped
  • 1/4 cup of chopped cilantro
  • 2 teaspoons of Sriracha chile sauce
  • 1 large jalapeño pepper
  • 1/2 of a red bell pepper, diced
  • ½ of a yellow bell pepper, diced
  • 3 tablespoons of olive oil
  • 1 tablespoon of fresh lime juice
  • 1 tablespoon of chopped mint
  • 1/2 pound of lump crabmeat
  • 2 medium tomatoes, diced
  • Salt

Preparation

  1. Create a salsa by combining the radishes, tomatoes, red onion, 2 tablespoons of the cilantro, Sriracha, and a dash of salt.
  2. Char the jalapeno, then remove its skin and chop it into small pieces.
  3. Combine it with the other peppers, as well as the lime juice, olive oil, mint, and remaining cilantro.
  4. Add crab meat and coat it with the mixture.
  5. In another medium bowl, combine the jalapeño, red and yellow bell peppers, olive oil, lime juice, mint and the remaining 2 tablespoons of cilantro.
  6. Gently fold in the crabmeat and season with salt.
  7. Grill tortillas until puffed. Top with crab mixture and salsa.

Baked Chicken Flautas

These chicken flautas taste like they were fried in a skillet, but they’re actually made in the oven.

Ingredients

  • 1 pound of chicken tenderloins
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of salt
  • Black pepper
  • 4 green onions, sliced
  • 2 tablespoons of fresh cilantro, chopped
  • 2 cups of pepper jack or Mexican blend cheese, shredded
  • 8 flour tortillas
  • Tomatillo sauce, either homemade or store bought

Preparation

  1. Line a baking pan with aluminum foil and brush with olive oil.
  2. Combine spices in a bowl and use them to season chicken.
  3. Heat chicken in a skillet drizzled with olive oil for a few minutes on each side, then toss with green onions and cilantro.
  4. Fill tortillas with ingredients and place seam-side down in the baking pan.
  5. Brush with olive oil and bake for 6 to 8 minutes at 425 degrees Fahrenheit.
  6. Remove from oven, turn over with tongs, brush with olive oil, and bake for 4 more minutes.

We just recently discovered how delicious chilaquiles are. Now they’re a staple in our homes, just like tacos, burritos, and quesadillas.

Ingredients

  • 2 cups of salsa verde, either homemade or from a jar
  • Tortilla chips
  • 1 can of black beans
  • 1 cup of shredded chicken
  • Sour cream
  • Red onion, finely chopped
  • Avocado, sliced or roughly chopped
  • Cotija cheese
  • Cilantro, chopped

Preparation

  1. Heat salsa verde for a few minutes and add tortilla chips until well coated.
  2. Place a pile of black beans on your plate, then top with the salsa-coated chips, chicken, diced onion, sour cream, avocado, cheese, and cilantro.

  1. Pan fry tortilla halves in corn oil and drain on paper towels.
  2. Top with all remaining ingredients, saving lettuce, chicken, and avocado for last.
  3. Serve with a lime vinaigrette or southwestern-style dressing.

Burritos are typically stuffed with hamburger or chicken, but sweet potatoes and black beans are just as filling.

Ingredients

  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • ½ of a red bell pepper, diced
  • 1 tablespoon of jalapeno, finely diced
  • 1 small sweet potato, cubed
  • 1 can of black beans, drained
  • 3 ounces of cream cheese
  • Tortillas, any variety
  • 2 tablespoons of fresh cilantro
  • Cherry tomatoes, halved
  • 2 tablespoons of olive oil
  • Salt, to taste

Preparation

  1. Heat sweet potatoes until tender. You can bake, pan fry, or microwave them.
  2. Heat onion, garlic, and peppers in a skillet coated with olive oil.
  3. Add black beans and sweet potato, and cook for approximately 5 minutes.
  4. Add cream cheese and salt. Stir well, and spoon onto tortillas.

  • Ground beef
  • Taco seasoning
  • Lettuce
  • Tomato
  • Shredded cheese

Preparation

  1. Prepare taco shells according to the box’s instructions.
  2. Mix taco seasoning with ground beef and heat mixture until fully cooked.
  3. Add beef, lettuce, tomato, and cheese to baked taco shells and serve.

Ingredients

  1. 1 Old El Paso™ Stand ‘n Stuff™ Taco Kit
  2. 1 finely chopped medium onion
  3. 1 peeled and chopped large sweet potato

  5. 125 g can drained & rinsed chickpeas
  6. 2 chopped tomatoes
  7. 3/4 cup water
  8. 1/2 cup finely chopped coriander

  • 1 cup of cooked, shredded chicken
  • ⅓ cup of barbecue sauce
  • 6 flour tortillas
  • 1 teaspoon of butter
  • 2 cups of cheese, shredded
  • 1 cup of fresh arugula
  • Olive oil

Preparation

  1. Heat onions in a skillet coated with olive oil.
  2. Combine remaining ingredients and heat for a few minutes.
  3. Fill 3 flour tortillas with ingredients and top with remaining tortillas, then brush with butter.
  4. Heat in a skillet or quesadilla maker until lightly browned on both sides.
