Ingredients

  • Flour, 1 ½ cups
  • Rolled oats, ¾ cups
  • Pumpkin spice, 1 ½ tsp
  • Egg, 1
  • Shelled sunflower seeds, 2/3 cup
  • Sunflower oil, ¼ cup
  • Canned pumpkin, ¾ cup
  • Baking powder, 2 tsp
  • Milk, ¾ cup
  • Packed brown sugar, ½ cup
  • Raisins, 1/3 cups
  • Salt, a pinch

Preparation

  1. Grease 12, 2 ½ inches muffin cups and set aside. Preheat oven to 400 degrees F.
  2. Add all the dry ingredients, except sunflower seeds and raisins, to a bowl and create a well in the middle.
  3. Add in all the wet ingredients and mix well. The batter would be lumpy.
  4. Now fold in the sunflower seeds and raisins and mix gently.
  5. Pour batter in muffin cups and bake for 25 minutes. Insert a toothpick to see if the muffins are done. Take out of the oven and let cool.
  6. Take out of the muffin tins and serve warm!

Blueberry Filled Muffins

Ingredients

  • Flour, 2 cups
  • Fresh blueberries, 2 ½ cups
  • Eggs, 2
  • Sugar, 1 cup
  • Milk, ½ cup
  • Softened butter, ½ cup
  • Salt, a pinch
  • Baking powder, 2 tsp

Preparation

  1. Preheat oven to 350 degrees F. grease 6 jumbo muffin cups and set aside.
  2. In an electric mixer, beat butter for 30 minutes on medium speed. Add in the sugar and beat some more. Then combine eggs, vanilla and milk too. Beat till mixed properly.
  3. Fold in the flour and then gently mix blueberries too.
  4. Pour batter in the muffin cups and bake for 25 minutes. Insert toothpick to check if they are done.

Ingredients

  • Egg, 1
  • Flour, 2 cups
  • Milk, 1 cup
  • Sugar, ¾ cup
  • Baking powder, 3 tsp
  • Vegetable oil, ¼ cup
  • Vanilla extract, 1 tsp
  • Salt, a pinch
  • Vanilla extract ½ tsp
  • Butter, ½ cup
  • Icing sugar, ½ cup
  • Vanilla flowers, a few

Preparation

  1. Preheat the oven to 400 degrees F. Grease the muffin baking tray and set aside.
  2. In a bowl, beat an egg, 1 tsp vanilla essence and then add milk and oil to it. Mix well.
  3. In another bowl, mix together baking powder, flour, granulated sugar, and salt. Create a gap in between and pour the egg mixture in it. Mix well so that it is well mixed but lumpy.
  4. Pour in the muffin tray and bake for 25 minutes or until toothpick inserted in center comes out clean. Set aside to cool.

  • Rolled oats, 1 cup
  • Flour, 1 cup
  • Shredded lemon peel, 2 tbsp
  • Egg, 1
  • Poppy seeds, 1 tbsp
  • Sugar, ½ cup
  • Lime curd, 1/3 cup
  • Milk, ¾ cup
  • Cooking oil, ¼ cup
  • Baking powder, 1 tbsp
  • Salt, a pinch

Preparation

  1. Grease 12 muffin cups and set aside. Preheat the oven to 35o degrees F.
  2. In a bowl, whisk oil, egg and milk.
  3. Combine all the dry ingredients in a separate bowl and create a well in the centre. Add the egg mixture and mix well.
  4. Pour the batter in the muffin cups so that they are 2/3 filled. Put 1 tsp of lime curd on top of the batter and bake for 20 minutes. Insert a toothpick to see if the center is done. Take out of the oven and let cool.
  5. Serve warm.

Smoky Cheesy Muffins

Ingredients

  • Yellow cornmeal, 1 cup
  • Flour, 1 cup
  • Smoked cheddar cheese, 1 cup
  • Sunflower seeds, as per taste or ½ cup
  • Cayenne pepper, ½ tsp
  • Milk, 1 cup
  • Butter, ¼ cup
  • Sugar, ¼ cup
  • Eggs, 2
  • Baking powder, 1 tbsp

Preparation

  1. Preheat oven to 400 degrees F. Grease 12 muffin cups and set aside.
  2. In a bowl mix together flour, cornmeal, baking soda, sugar and cayenne pepper.
  3. Add eggs, milk and butter to another bowl and beat with an electric beater.
  4. Add the eggs to the flour mixture.
  5. Shred the cheese and add it to the flour mixture, until smooth.
  6. Put the batter in muffin cups almost till the top and bake for 15 minutes.
  7. Take out when a toothpick inserted in centre comes out clean.
  8. Let cool and serve warm.

Apricoty Almond Muffins

Ingredients

  • Dried apricots (snipped), ½ cup
  • Almonds (sliced), 1/3 cup
  • Flour, 2 cups
  • Brown sugar, 2/3 cups
  • Butter, ½ cup
  • Buttermilk, 1 cup
  • Egg, 1
  • Vanilla extract, ½ tsp
  • Almond extract, ½ tsp
  • Baking soda, ½ tsp
  • Baking powder, 1 tsp
  • Salt, a pinch

Preparation

  1. Take twelve 2 ½ inch muffin cups and grease them. Set aside.
  2. Preheat oven at 350 degrees F.
  3. Take a bowl and mix together butter, egg, buttermilk, brown sugar, almond extract and vanilla extract. Also add in apricots.
  4. In a different bowl, mix together flour, salt, baking powder and baking soda. Make a gap in the centre and add all the wet ingredients to it. Mix together but don’t fold in too much.
  5. Put the batter in muffin cups about 2/3 of the way. Sprinkle the almonds on top.
  6. Bake for 20 minutes or until golden. Check with a skewer to see if the centre is done and then take out.
  7. Let cool for 5 minutes and then take out of the muffin cups. Serve!
