Greek Frittata With Potatoes

Frittatas are one of the most well liked breakfast items. What sets this recipe apart is that it is Greek but with a potato twist. Once you try it, you will want to make it every Sunday! Here is what you need to do.
Ingredients
- Boiled potatoes, ½ cup
- Eggs, 10
- Baby spinach, 1 cup
- Scallions (sliced), 4
- Cherry tomatoes (halved), 1 cup
- Olive oil, 3 tbsp
- Feta cheese (crumbled), 1 ½ cup
- Black pepper, 1 tsp
- Salt, 2 tsp
Preparation
- Preheat oven to 350 degrees F. oil a casserole dish and place in the oven for 3-5 minutes.
- Whisk eggs, along with salt and pepper. Once light and fluffy, add scallions, spinach and tomatoes. Mix briskly.
- Add in the potatoes and Feta. Be sure to fold gently.
- Take out the casserole dish from the oven and pour the egg mixture into it.
- Let bake for around 20-25 minutes or until a knife comes out clean. The top of the frittata will turn golden.
- Serve as soon as it is out of the oven!
Potato Bhujia

This exotic main course from the southeast is going to take you by a storm. The best part about it is though you can eat it with a fork, spread it on bread, or even enjoy with boiled rice. You can adjust the spice according to your own taste. Here is how you can make potato bhujia.
Ingredients
- Potato, ½ kg
- Chicken stalk cubes, 1
- Small onion (chopped), 1
- Garlic clove (crushed), 1
- Oil, 3 tbsp
- Red chili flakes, 2 tsp
- Salt, to taste
- Turmeric powder, 1 tsp
- Green chili (chopped), 1
- Coriander, for garnish
Preparation
- In a sauce pan, place all the potatoes and fill it up with water.
- Add some salt and boil till the potatoes get soft. Take off heat, let cool and then peel. Pat dry.
- Roughly mash all the potatoes with a fork and set aside.
- In another pan, add the oil, onions and garlic.
- As soon as the onion turns slightly golden, add the mashed potatoes and cook on medium low speed.
- Then add in salt, chili flakes and turmeric. Also add the green chili. Mix well, lower the heat and cover.
- Let cook for 15 minutes or as long as it takes for the oil to start glistening on top of the potatoes.
- Serve with naan bread or boiled rice!
Cheesy Garlicky Potato Gratin

Ingredients
- Flour, 1 tbsp
- Milk, 1 cup
- Yukon gold potato (sliced thinly), 5 cups
- Goat cheese (crumbled), 1 cup
- Garlic clove (minced), 1
- Cooking spray
- Salt, as per taste
- Pepper, 1 tsp
- Nutmeg, a pinch
Preparation
- Preheat oven to 400 degrees F.
- In a bowl, add milk, along with flour. Then add garlic, spices and cheese and whisk some more.
- In a casserole dish, apply oil through cooking spray. Then layer the base with half of the potatoes.
- Spread half the milk mixture on it and again layer the remaining potatoes.
- Then pour the remaining milk mixture and bake for 1 hour 15 minutes.
- Insert a toothpick to see if the potatoes have gotten tender. If not bake some more.
- Serve warm with a glass of lemonade!
Doubly Baked Potato Spinach Goodness

Ingredients
- Baking potatoes, 3
- Cream cheese, ½ cup
- Sharp cheddar cheese, 1 ¾ cups
- Milk, ½ cup
- Onion (chopped finely), ¼ cup
- Frozen spinach (chopped), 10 ounces
- Green onions (sliced), 1
- Black pepper, to taste
- Salt, to taste
Preparation
- Preheat oven to 400 degrees F.
- Poke holes in potatoes with fork and bake for 1 hour 15 minutes or until tender. Take out once done and let cool.
- Cut in half and take out the pulp of the potato, leaving a thin layer behind.
- Mash the pulp, add milk and cream cheese to it and whisk. Then add cheddar cheese, spinach, salt and pepper. Mix thoroughly.
- Scoop the mashed potato mixture into the potato cover, sprinkle green onions on it and bake for 15-17 minutes.
- Serve immediately!
Potato Truffles

Ingredients
- Cold mashed potatoes, ½ cup
- Milk or dark chocolate chips, 1 cup
- Cocoa powder, ½ cup
- Coconut flakes, ½ cup
- Chopped nuts, ½ cup
- Vanilla extract, ½ tsp
Preparation
- Melt chocolate chips in a double boiler or microwave so that they make a smooth paste.
- Then add vanilla and mashed potatoes in it and mix briskly. When it is well combined, refrigerate for half an hour.
- Now set up the coating ingredients, cocoa, nuts and coconut out in a plate, make small balls of the mashed potato chocolate mixture and roll in the toppings. Set on a tray and refrigerate until firm.
- Enjoy them whenever you like!
Potato Chip Pecan Cookies

Ingredients
- Pecans (chopped), 12 tbsp
- Potato chips, 1/3 cup
- Egg yolk, 1
- Flour, 1 ½ cup
- Butter, ¾ cup
- Sugar, ¾ cup
- Vanilla essence, 1 tsp
Preparation
- Preheat oven to 375 degrees F.
- In a bowl, combine together ¾ cup sugar, butter, yolk and vanilla extract. Beat till it turns fluffy. Then mix in flour and potato chips. Once they are mixed, add in the pecans.
- Grease a cookie sheet and put small balls of the mixture on it. Make sure they are 3 inches apart. Bake for 12 minutes till they are golden.
- Take out from the oven and let cool. Enjoy them with coffee or tea!
