Ingredients

  • Boiled potatoes, ½ cup
  • Eggs, 10
  • Baby spinach, 1 cup
  • Scallions (sliced), 4
  • Cherry tomatoes (halved), 1 cup
  • Olive oil, 3 tbsp
  • Feta cheese (crumbled), 1 ½ cup
  • Black pepper, 1 tsp
  • Salt, 2 tsp

Preparation

  1. Preheat oven to 350 degrees F. oil a casserole dish and place in the oven for 3-5 minutes.
  2. Whisk eggs, along with salt and pepper. Once light and fluffy, add scallions, spinach and tomatoes. Mix briskly.
  3. Add in the potatoes and Feta. Be sure to fold gently.
  4. Take out the casserole dish from the oven and pour the egg mixture into it.
  5. Let bake for around 20-25 minutes or until a knife comes out clean. The top of the frittata will turn golden.
  6. Serve as soon as it is out of the oven!

Ingredients

  • Potato, ½ kg
  • Chicken stalk cubes, 1
  • Small onion (chopped), 1
  • Garlic clove (crushed), 1
  • Oil, 3 tbsp
  • Red chili flakes, 2 tsp
  • Salt, to taste
  • Turmeric powder, 1 tsp
  • Green chili (chopped), 1
  • Coriander, for garnish

Preparation

  1. In a sauce pan, place all the potatoes and fill it up with water.
  2. Add some salt and boil till the potatoes get soft. Take off heat, let cool and then peel. Pat dry.
  3. Roughly mash all the potatoes with a fork and set aside.
  4. In another pan, add the oil, onions and garlic.
  5. As soon as the onion turns slightly golden, add the mashed potatoes and cook on medium low speed.
  6. Then add in salt, chili flakes and turmeric. Also add the green chili. Mix well, lower the heat and cover.
  7. Let cook for 15 minutes or as long as it takes for the oil to start glistening on top of the potatoes.
  8. Serve with naan bread or boiled rice!

  • Flour, 1 tbsp
  • Milk, 1 cup
  • Yukon gold potato (sliced thinly), 5 cups

Preparation

  1. Preheat oven to 400 degrees F.
  2. In a bowl, add milk, along with flour. Then add garlic, spices and cheese and whisk some more.
  3. In a casserole dish, apply oil through cooking spray. Then layer the base with half of the potatoes.
  4. Spread half the milk mixture on it and again layer the remaining potatoes.
  5. Then pour the remaining milk mixture and bake for 1 hour 15 minutes.
  6. Insert a toothpick to see if the potatoes have gotten tender. If not bake some more.
  7. Serve warm with a glass of lemonade!

  • Baking potatoes, 3
  • Cream cheese, ½ cup
  • Sharp cheddar cheese, 1 ¾ cups

Preparation

  3. Cut in half and take out the pulp of the potato, leaving a thin layer behind.
  4. Mash the pulp, add milk and cream cheese to it and whisk. Then add cheddar cheese, spinach, salt and pepper. Mix thoroughly.
  5. Scoop the mashed potato mixture into the potato cover, sprinkle green onions on it and bake for 15-17 minutes.
  6. Serve immediately!
