Butternut Squash Beef Stew

Ingredients
- Crusty bread
- 3 tbsp of olive oil
- 3 cups of beef broth
- 2 tbsp of flat-leaf parsley (chopped)
- 2 tbsp of all-purpose flour
- 2 lbs. of stew beef (sliced into 2-inch cubes)
- 2 garlic cloves (chopped)
- 1/4 cup of sun-dried tomatoes (chopped)
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 1 tbsp of thyme (chopped)
- 1 tbsp of rosemary (minced)
- 1 onion (peeled and chopped)
- 1 lb of butternut squash (trimmed and sliced into 2-inch cubes)
- 1 cup of Marsala wine
Preparation
- Add 3 tbsp of olive oil into a saucepan and place it over medium heat.
- Include garlic, onions, thyme, rosemary, and sauté it for about 2 minutes.
- In a bowl, add salt, black pepper, flour, beef, and toss to combine.
- Increase the heat to medium-high heat, add beef into the saucepan, and cook for 5 minutes.
- Add wine and use a wooden spoon to loosen the brown bits.
- Include the butternut squash, tomatoes, and mix to combine.
- Include beef broth to cover the squash and the beef, and bring to a boil over high heat.
- Decrease the heat to low, cover it, and let it simmer for about an hour.
- Add black pepper and salt to taste in the stew.
- Garnish it with parsley and serve it with bread.
Spicy Pork, Squash, Bean, and Corn Stew

- 1 can of black beans (drained)
- 1 can of pinto beans (drained)
- 1 can of tomatoes (chopped)

- 1 yellow onion (diced)
- 1 yellow squash (diced)
- 1/2 bunch of cilantro (coarsely chopped)
- 1/2 cup of roasted green chilies
- 2 cups of corn kernels

- 4 cups of low-sodium chicken stock
- Salt and black pepper to taste
Preparation
- Season the meat with salt, black pepper, and cumin.
- In a saucepan, add oil and place it over medium-high heat.
- Include pork and cook it for 6 minutes, turning it as you cook it.
- Place pork in a bowl and put it aside.
- Add onion to the pan and sauté it, stirring occasionally, for 7 minutes.
- Include garlic and sauté it, stirring occasionally, for 3 minutes.
- Place pork back into the pan, add squash and stock, and bring to a boil.
- Decrease the heat to medium-low heat, cover it, and let it simmer for 30 minutes.
- Include beans, corns, tomatoes, and chilies, uncover the pot, and let to cook for 40 minutes over medium heat.
- Garnish it with cilantro and serve.

Ingredients
- A bottle of Irish stout beer
- 6 minced garlic cloves
- 4 cups of carrot (sliced)
- 2 tsp of vegetable oil
- 2 tbsp of all-purpose flour
- 2 potatoes (peeled and diced)
- 2 cups of mushrooms (sliced)
- 2 cups of beef broth 1
- 1/4 cup of parsley (chopped)
- 1 tbsp of cornstarch
- 1 tbsp of cold water
- 1 onion (chopped)
- 1 lb. beef stew meat (lean)
- 1 can of tomato paste
Preparation
- Add oil in a pot and place it over medium-high heat.

Ingredients
- 1 can of plum tomatoes (diced and undrained)
- 1 large onion (diced)
- 1/4 cup of cilantro stems (chopped)
- 12 oz. of spicy sausage
- 2 tbsp of olive oil
- 2 tsp of salt (kosher)
- 4 cans of black beans (cooked and drained)
Preparation
- Pour oil into a pot and place it over medium heat on the stove.
- Add onion and cook it for 10 minutes.
- Add cilantro stems and sausage, and cook for about 5 minutes over high heat.
- Add tomatoes with liquid, beans, and 1 cup of water.
- Bring everything to a boil over high heat.
- Decrease the heat, partially cover the pot, and cook for 1 hour.
- Season the stew with salt and serve.
Seafood Stew

Ingredients

- 4 garlic cloves (minced)
- 3/4 cup of dry white wine
- 3 dozen clams (washed and clean)
- 1/4 cup of water
- 1/2 onion (chopped)
- 1/2 cup of thinly chopped parsley (divided)
- 1 tbsp of olive oil
- 1 pound shrimp (peeled and deveined)
- 1 pound scallops
- 1 link of chorizo sausage (sliced)
- 1 diced tomato
- 1 bay leaf
Preparation
- Pour oil into a pot and place it over medium heat.
- Add onion and garlic, and sauté it for 2 minutes.
- Add tomatoes, bay leaf, sausage, salt and black pepper, and 1/4 cup of parsley into the pot, cooking it for 5 minutes.
- Include clams, mix to combine, cover it, and cook for 5 minutes.
- Include scallops, shrimp, and cook for another 3 minutes.
- Place into bowls, garnish it with parsley, and serve.
Chicken And Bratwurst Stew

Ingredients
- 1 can of black beans (drained and rinsed)
- 1 can of Great Northern beans (drained and rinsed)
- 1 cooked boneless skinless chicken breast (shredded)
- 1 onion (sliced)
- 1 tbsp of crushed red pepper
- 2 tbsp of butter
- 3 bratwurst links
- 3 stalks celery (chopped)
- 30 oz. of chicken broth (low-sodium)
- 4 basil leaves
- 4 carrots (chopped)
- Salt and black pepper to taste
Preparation
- In a Dutch oven, heat butter over medium heat.
- Include onion and cook for 2 minutes.
- Slice the sausage link into small pieces.
- Add the sausage into the oven, cooking it until browned.
- Include celery, carrots, and cook for 2 minutes.
