Ingredients

  • Extra virgin olive oil - 3/4 cup
  • Fresh dill - 1/4 cup
  • Pine nuts - 1/3 cup
  • Cubed focaccia - 1/2 pound
  • Trimmed white asparagus - 1 1/2 pounds
  • Peeled shallot - 1
  • Pasteurized egg yolks - 2
  • White wine vinegar - 2 tablespoons
  • Dijon mustard - 2 teaspoons
  • Salt & pepper – to taste
  • Spring salad mix - 1 package

Preparation

  1. Toast bread and pine nuts in 350 degrees oven until golden.
  2. Add asparagus to a pot of salted boiling water and cook for 2 minutes. Transfer the asparagus into a bowl of cold water and slice into small pieces when cold.
  3. Mix dill, shallot, vinegar, yolks, mustard, ¼ tsp salt, and ¼ tsp pepper in a blender. Add olive oil and mix a little and transfer to a bowl.
  4. Add asparagus into a bowl alongside bread, pine nuts, and ½ cup dressing.
  5. Add more green veggies into the bowl and enjoy.
