Cinnamon Mocha Sheet Cake

Ingredients
- 2 cups of sugar (sifted confectioners’)
- 1 tablespoon of milk (more can be added if required)
- ½ teaspoon of ground cinnamon
- 3 tablespoons of strong and brewed coffee
- 3 tablespoons of unsweetened cocoa powder
- ¼ cup of butter
- 2 lightly beaten eggs
- ½ cup of milk
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking soda
- 1 ½ teaspoons of ground cinnamon
- 2 cups of all purpose flour
- 1 cup of brown sugar
- 1 cup of white sugar
- 2 tablespoons of instant espresso powder
- 1 cup of water
- 1/3 cup of cocoa powder (unsweetened)
- 1 cup of butter
Preparation
- Preheat the oven to 350 degrees F and grease a jelly roll pan of 10x15 inches.
- Melt a cup of butter using medium heat in a saucepan. Whisk together water, espresso powder, and 1/3 cup of cocoa powder until the mixture is smooth.
- Combine together baking soda, 1 ½ teaspoon of cinnamon, flour, brown sugar, and white sugar inside a mixing bowl. Pour vanilla extract, eggs, ½ cup of milk, and the butter cocoa mixture. Mix this thoroughly. Pour this batter into the baking sheet that you prepared.
- Bake this in the preheated oven until the cake is springy.
- For the icing, take a saucepan or use the microwave to melt ¼ cup of butter. Transfer this melted butter in a mixing bowl. Whisk together coffee, 3 tablespoons of cocoa powder, 1 tablespoon of milk, and ½ teaspoon of cinnamon. In a slow manner, mix the sifted confectioner’s sugar and then beat this until it becomes smooth. Add milk according to your requirement so that the consistency that you like is reached. Spread icing on the cooled cake.
Country Apple Dumplings

Ingredients
- 1 bottle or can of Mountain Dew
- 1 teaspoon of ground cinnamon
- 1 ½ cups of white sugar
- 1 cup of butter
- 2 cans of refrigerated crescent roll dough
- 2 large cored and peeled granny smith apples
Preparation
- Preheat the oven to 175 degrees C and grease a baking dish of 9x13 inches.
- Each of the apples needs to be cut into eight wedges and then you can set these aside. Separate crescent roll dough in triangles. Roll each of the apple wedges inside the crescent roll dough and you start with the smallest end. Punch these so that you can seal them and then place these inside a baking dish.
- Melt some butter inside a saucepan and then stir with it cinnamon and sugar. Pour this on top of the apple dumplings and pour the Mountain Dew on these dumplings.
- Bake this for around 35 to 45 minutes inside the preheated oven until then become golden brown.
Apple Harvest Pound Cake With Caramel Glaze

Ingredients
- ½ cup of brown sugar
- 2 teaspoons of milk
- ½ cup of margarine or butter
- 1 cup of chopped walnuts
- 2 cored, chopped, and peeled medium sized granny apples
- 1 teaspoon of salt
- ½ teaspoon of ground cinnamon
- 1 teaspoon of baking soda
- 3 cups of all purpose flour
- 3 eggs
- 2 teaspoons of vanilla extract
- 1 ½ cups of vegetable oil
- 2 cups of white sugar
Preparation
- Preheat your oven to 175 degrees C and grease a Bundt pan of 9 inches.
- Take a large bowl and beat together eggs, vanilla, oil, and sugar using an electric mixer. Do this until the mixture becomes fluffy and light. Combine together salt, cinnamon, baking soda, and flour, and stir until well blended. Fold the walnuts and the apples in with the help of a spoon. Pour this in the pan that you have prepared.
- Bake this for about 1 hour and 20 minutes and test it with toothpick afterwards. If the toothpick comes out clean, then no further baking is required. Allow your cake to cool off for around 20 minutes before you place this on a wire rack.
- The glaze can be prepared by heating brown sugar, milk, and butter together in a saucepan on medium heat. Bring this mixture to a boil and dissolve the sugar in the process. Drizzle this on top of your warm cake.
Fresh Pear Pie

Ingredients
- 1 tablespoon of lemon juice
- 1 tablespoon of butter
- 5 cups of sliced and peeled pears
- 1 teaspoon of lemon zest
- 1 teaspoon of ground cinnamon
- ¼ teaspoon of salt
- 3 tablespoons of all purpose flour
- ½ cup of white sugar
- 1 pastry for double crust 9 inch pan
Preparation
- Preheat your oven to 230 degrees C and on the bottom rack of the oven, place a baking sheet.
- Combine together lemon zest, cinnamon, salt, flour, and sugar inside a mixing bowl. Roll half of the pastry out and line with it a pie pan of 9 inches.
- Arrange the pear slices in your pastry lined pan in layers and sprinkle sugar mixture on top of each layer. Dot this using butter and then sprinkle lemon juice all over it.
- Roll the remainder dough out for top layer crust. Dip your finger in a water bowl and then moisten the bottom crust rim. Place your top crust on top of the filling and trim the edges with the help of a sharp paring knife or kitchen shears. Fold the edge under the bottom crust and press to seal. Flute the edge. After this, cut slits on the top layered crust so that steam can be allowed to escape.
- Bake for 10 minutes and then reduce oven heat to 175 degrees C. Then continue baking for around 35 to 40 minutes.
