Ingredients
Salsa:
- 1 1/3 cups of yellow peaches (chopped and peeled)
- 1/3 cup of green onions (sliced)
- 1 cup of red bell pepper (chopped)
- 1/2 habanero pepper (minced and seeded)
- 1/3 cup of fresh arugula (chopped)
- 1/4 cup of fresh lemon juice
- 1/8 tsp of salt
- 4 tsp of fresh oregano (chopped)
- 1 clove of garlic (minced)
Fish:
- 4 tsp of olive oil
- 4 tsp of fresh lemon juice
- 4 halibut fillets (skinless)
- 1/2 tsp of paprika
- 1 clove of garlic (minced)
- 3/8 tsp of ground black pepper
- 3/8 tsp of salt
- Cooking spray
Preparation
- Prepare the salsa by combining yellow peaches, red bell pepper, green onions, arugula, lemon juice, oregano, garlic, habanero pepper, and salt. Toss them together and serve it after 30 minutes.
- Grill the fish on medium-high heat.
- Prepare the fish by combining 4 tsp of lemon juice, paprika, garlic, and oil in glass baking pan. Mix using a whisk.
- Add fish to the mixture and coat it from both sides. Allow it to sit for about 15 minutes.
- Take out the fish from the mixture and sprinkle it with 3/8 tsp of pepper and salt.
- Spray the grill rack with cooking spray and place the fish on it.
- Grill each side of the fish for 3 minutes.
- Serve it with salsa.

Preparation
- Place brown sugar, bourbon, soy sauce, ginger, limejuice, garlic, and black pepper into a zip-loc bag.
- Add the salmon to the bag and place it in the fridge for about 1 hour and 30 minutes.
- Place a skillet over medium-high heat.
- Spray the pan with cooking spray.
- Add salmon and the marinade to the pan.
- Cook the salmon on each side for 4 minutes.
- Drizzle the salmon with 2 tsp of sauce, 1 tbsp of green onions, and 3/4 tsp of sesame seeds and serve.
