Ingredients

  • Spaghetti, 1 lb
  • Olive oil, 2 tbsp
  • Bacon (diced), 8 slices
  • 1 medium-sized onion, chopped
  • Garlic (minced), 1 tsp
  • 4 medium-sized eggs
  • Dry white wine, ¼ cup
  • Parmesan cheese (grated), ½ cup
  • Fresh parsley (chopped), 2 tbsp
  • Salt, a pinch
  • Black pepper, to taste

Preparation

  1. Prepare spaghetti by boiling salted water and cooking pasta spaghetti until tender. Drain and rinse through cold water. Add 1 tbsp olive oil and toss. Set aside.
  2. Place a large skillet over low-med heat. Add chopped bacon and cook until crispy. When done, remove from the skillet and drain using paper towels.
  3. Reserve bacon fat and add the remaining 1 tbsp olive oil. Heat and add onion. Cook for 2 minutes until onions are tender and translucent. Add garlic and continue cooking for another minute.
  4. Add back the cooked bacon and spaghetti. Toss and coat well. If it gets too dry, feel free to add more oil. Add beaten eggs to the skillet and cook. Use a large folk to constantly stir and let the eggs set. Add parmesan cheese next and toss to mix everything well.
  5. Season with salt and pepper and don’t forget that parmesan and bacon are already salty.
  6. Top with chopped parsley and sprinkle more parmesan cheese on the top.
  7. Serve immediately and enjoy!

  • Smooth peanut butter, 2 tbsp

  • 2 eggplants (peeled and chopped into small chunks), 2 lb
  • Snow peas (remove strings, halved), 1 cup
  • Spaghetti pasta, 1 pkg.
  • 2 medium-sized bell peppers (julienned)

Preparation

  1. In a large mixing bowl, whisk together vinegar, soy sauce, honey, peanut butter, ginger, and garlic. Mix will to combine and set aside.
  2. Steam eggplants by placing them in a steaming bowl over simmering water. Cook until completely tender. This could take up to 15 minutes. Add bell peppers and snow peas to the steaming bowl and cook for another 5 minutes. Remove bowl from the pan.
  3. Cool pasta following the package instructions in salted water. Drain and add steam veggies to the spaghetti. Add the soy sauce mixture to the pan and toss to combine everything.

  • Red kidney beans (along with liquid), 1 can
  • Great northern beans (along with liquid), 1 can
  • V-8 juice, 1 can
  • Tomato sauce, 1 can

  • Basil, 1 tsp
  • Oregano, 1 tsp
  • Pepper, ½ tsp

Preparation

  1. Place a large nonstick pot or saucepan over low-med heat. Add ground beef and cook until browned. Cook for 10-12 minutes until done. Drain most of the fats off.
  2. Add carrots, onion, garlic, and celery in the pan. Sauté for 10 minutes, stirring constantly.
  3. Add all the remaining ingredients (except pasta). Combine to adjust flavors and let it simmer for one hour.
  4. Meanwhile, prepare pasta following the package instructions in salted water. 50 minutes into the simmering, add pasta to the pot and simmer for remaining 10 minutes.
  5. Stir to combine everything and serve warm. Enjoy!

  • Olive oil, 1 tsp
  • Onion (chopped), 1 cup
  • Red wine, 3/8 cup
  • Garlic (minced), 4 tsp
  • Fresh basil (chopped), 1 tbsp
  • Red pepper flakes, 1 tsp
  • Tomato paste, 2 tbsp
  • Italian seasoning, ½ tsp
  • Lemon juice, 1 tbsp
  • Ground black pepper, ¼ tsp
  • Diced tomatoes (peeled), 2 cans
  • Fresh parsley (chopped), 2 tbsp
  • Penne pasta, 1 cup

Preparation

  1. Add oil in a large skillet over low-med heat. When oil is hot, add garlic and onion and sauté for 5 minutes.
  2. Stir in sugar, wine, red pepper, basil, lemon juice, tomato paste, black pepper, Italian seasoning, and tomatoes. Stir together to combine and bring to a boil. Adjust heat to low and let simmer for 15 minutes.
  3. Prepare penne pasta according to the package instructions.
  4. Stir in parsley when ready to be served.
  5. Ladle over the penne pasta.

  • 2 Italian sausage links (remove casings)
  • Ground beef, 1 lb
  • 1 medium-sized yellow onion (chopped)

  • Spaghetti (cooked), 1 pkg.
  • Whole peeled tomatoes, 1 can
  • Salt, 1 tsp
  • Basil (dried), 1 tsp
  • Ground black pepper, ¼ tsp
  • Fresh oregano (chopped), ¼ cup
  • 1 bay leaf
  • Parmesan cheese (grated), ½ cup
  • Tomato sauce, 1 can

Preparation

  1. Slice sausages lengthwise leaving them intact from one end. Spread and place in a skillet over low-med heat. Cook for 15 minutes at low-med heat. Flip once and cook on the other side until browned and thoroughly cooked. When done, remove and set aside.
  2. In skillet, heat oil and add ground beef. Add onion and garlic and stir together. Cook for 10 minutes over low-med heat and continue stirring. When the beef is browned and onion is tender, drain all the excess liquid but 2 tablespoon.
  3. Stir in tomato sauce, tomatoes, basil, black pepper, salt, bay leaf, and oregano. Simmer at low heat for 1 hour, keeping the skillet uncovered. Stir occasionally and let the flavors blend nicely.
  4. Remove bay leaf.
  5. Set the oven to preheat setting at 350 degrees F.
  6. Mix sauce and combine it with the cooked pasta.
  7. Place servings of hot pasta and sauce in oven-safe placed. Place sausage on top and cover with parmesan cheese. Place the place in the oven for 10 minutes and let the cheese melt completely.
  8. When done, remove from the oven and let cool. Serve warm and enjoy!

  • Olive oil, 3 tbsp
  • Butter, 3 tbsp

  4. Add garlic and cook for 2 minutes until fragrant. Add the cooked pasta and toss to adjust flavor. Add tomatoes, stir and cook for 2-3 minutes. Next, toss in broccoli and combine.
  5. Adjust flavors by seasoning with salt and pepper.
  6. Add parmesan cheese on the top and let it melt slightly.
