Butternut Squash and Honey Winter Salad

Ingredients

  • 1 Butternut squash, thin wedges
  • Olive oil, 3 tbsp
  • 4 parsnips, thin wedges
  • 2 medium-sized red onions, halved and cut into wedges
  • Clear honey, 1-2 tbsp
  • Sunflower seeds, 1 tbsp
  • 1 small ciabatta, tear into pieces
  • 1 tomato, chopped
  • A handful of black olives, chopped
  • Dijon mustard, 1 tsp
  • White wine vinegar, 2 tbsp

Preparation

  1. Set the oven to preheat setting at 220 degrees C.
  2. Add all the vegetables in a large roasting tin. Season with salt and drizzle half the olive oil. Set to roast in a preheated oven and continue roasting for 20 minutes. Turn once while cooking.
  3. Drizzle with clear honey and set aside. Place torn ciabatta on another roasting tin and add the roasted vegetables on top. Sprinkle with sunflower seeds and set to roast for another 5 minutes.
  4. Whisk vinegar and remaining ingredients in a small mixing bowl. When the salad is ready, transfer to a platter and flavor with the seasoning. Add the remaining oil and toss to combine all flavors.
  5. Serve and enjoy.

Ingredients

  • 4 sausages
  • 3 medium potatoes
  • 2 parsnips
  • Milk, 4 tbsp
  • Brussels sprout, 175g
  • Wholegrain mustard, 1 tbsp
  • Salt, to taste
  • Pepper, to taste

Preparation

  • Grill all four sausages on a grill or pan until done.
  • Peel and chop potatoes and parsnips and cook in boiling water for 10 minutes until softened.
  • Add sprouts to the pan for 2-3 minutes along with potatoes and parsnips and cook for 3-4 minutes until tender.
  • Mash vegetables and stir in milk. Continue beating to reach perfect consistency. Season with salt and pepper.
  • Serve with sausages and enjoy.

Ingredients

  • 4 pieces of salmon
  • Black pepper, to taste
  • Salt, to taste
  • Extra virgin olive oil, to cook
  • 2 lemons
  • 3 garlic cloves, minced
  • Unsalted butter, 3 tbsp
  • Chicken stock (low sodium), 1 cup
  • Parsley (chopped), 2 tbsp

Preparation

  1. Preheat a skillet over med-high heat. Pat dry salmon and season with salt and pepper.
  2. Add oil to the skillet and place salmon. Cook for 3 minutes until golden brown on one side. Flip and cook for another minute. Put it on a plate.
  3. Add butter to the same skillet along with lemon juice, lemon zest and garlic. Sauté for 1-2 minutes and season with salt and pepper. Let the mixture reduce to half.
  4. Add back salmon and toss in the sauce. Continue cooking for 3-4 minutes until totally covered and creamy.
  5. Serve with lemon slices and parsley on top.

Ingredients

  • Shrimp (peeled and deveined with tail), 1 lb
  • Garlic (minced), 1 tsp
  • Honey, 4 tbsp
  • Ginger (minced), ½ tsp
  • Soy sauce, 2 tbsp
  • Oil, for cooking

Preparation

  1. Combine garlic, ginger, honey and soy sauce and divide the mixture into half.
  2. Use half of the mixture to marinate shrimp. Toss and set aside for 20-30 minutes. Discard marinade.
  3. Place skillet over low-med heat and add oil. Add shrimp and sear them until browned. Cook for 1 minute on each side.
  4. Dish out and pour remaining sauce on top. Serve hot for refreshing flavors

  • Pasta, 1 lb
  • Whole milk, 1 ½ cups
  • Shredded cheddar cheese, 3 cups
  • All-purpose flour, 2 tbsp
  • Salt, ½ tsp
  • Ground mustard, ¼ tsp
  • Broccoli, to serve

Preparation

  1. Boil pasta following the directions on the packaging
  2. Prepare cheese sauce. Heat 1 cup milk in a saucepan. In a bowl, whisk together ½ cup milk and flour until thoroughly combined. When the milk is warm, add this mixture and stir until the mixture starts to thicken. Cook for 3-4 minutes.
  3. Add cheese in the mixture in batches and continue to mix. Season with salt and mustard. Continue cooking until the cheese has melted and incorporated.
  4. In a serving bowl, combine pasta and cheese and serve immediately.
